Wanting cookies

Hmm... well, blogger won't let me upload a picture, but if I could I would have a picture of chocolate chip cookies on a shiney new cookie sheet as they were coming out of the oven all perfect and looking good enough to eat.....

It's almost Christmas and I'm in the mood for cookies. I like chocolate chip the best. But I also like a good soft sugar cookie and peanut butter cookie oh and of course no bake cookies. But I also like those white chocolate dipped pretzels, I know they're not in the cookie family, but they are Christmas-y if they have red and green sprinkles on them! So tell me, blogger fans, what kind of cookies and treats do you like to eat around the holidays?

Oh, and if you wanted to post a great recipie I would be tempted to make some and tell you what I think of your cookies.

No really, it's ok. Go ahead, post your secret family recipe. I won't tell anyone! I promise!

I'll need something to do with Peanut while she's out of school and begging every five seconds to open presents.

My mom used to make several different kinds of bars and cookies around Christmas time, and they are still my favs. Lemon bars, Russian tea cakes, cherry bars, prayer bars (divine!), the peanut butter cookies with a herseys kiss on the top. Mmmm.

We make toffee, molasses cookies, butterballs... I go into major baking mode this week.

The cookies in demand lately are the butterball. It's not any family secret-- and in fact, one of the easier recipes I have (though I'll warn you, it's kind of messy, with all the powdered sugar!)

1 cup softened butter or margarine (butter flavored Crisco works well)
3/4 c confectioners' sugar
2 c flour
1 tsp vanilla
more confectioners' sugar for coating

Preheat oven to 350°F

Beat margarine at high speed until fluffy. Add sugar, flour and vanilla, and mix well.

Shape dough into 1" balls, and place 1" apart on cookie sheet. Bake about 20-25 minutes, until pale golden brown.

Roll in confectioners' sugar while still hot (I shake several of them at a time in a paper bag, or ziploc bag, with a cup or so of sugar in it). Allow to cool, and roll (or shake) in sugar again to coat evenly. Makes about 3 dozen.

Here's a recipe I just found on the Internet...made it...they're fantastic.

Chocolate Cream Cheese Cookies


1 (8 ounce) package cream cheese (lower-calorie works fine)
1/2 cup butter, softened
1 large egg
1-1/2 cup granulated sugar
1 (12 ounce) package semi-sweet chocolate chips, divided
2-1/4 cups all-purpose flour
1-1/2 teaspoons baking soda
1/2 cup chopped nuts (optional)


Pre-heat oven to 350 F. Beat cream cheese with butter, egg and sugar until light and fluffy. In the top of a double boiler over hot (not boiling) water, melt 1 cup of the chocolate chips. Stir into batter. Stir in flour, baking soda and nuts, if desired, along with remaining chocolate chips. Drop by heaping teaspoonfuls onto ungreased baking sheets. Bake 10 to 12 minutes or until firm around the edges. Allow to cool one minute on baking sheets then remove to wire racks to cool completely. Makes 4 dozen cookies.

Here's one that gets them every time. Make your favorite oatmeal raisin cookies only instead of raisins, dump in a package of butterscotch chips. Oh MAN are they good! My best friend introduced me to those awhile back and called them Oatmeal Scotchies. YUMMY! Also, if you can find the small bag of Heath Toffee Chips, throw half of that bag in, too. Then you get Oatmeal Toffee Scotchies. They're da bomb!

I LOVE cookies too, Leslee! Especially this time of year. Now I have to go into overdrive and get started on my baking now that I am back home. :)

Jules, i've heard of dumping in chocolate chips but never butterscotch chips. That sounds wonderful!

It's not a cookie but I made these awesomely sinful peanut butter/chocolate chip cheese cake bars last night that were just wonderful. I'll give you that recipe if you'd like.

Mike will be glad to know I'm making them again on Christmas eve.

Chocolate & Peanut Butter Cheesecake Bars

2 ½ cups graham cracker crumbs
¾ cup (1 ½ sticks) butter, melted
¾ cup granulated sugar, divided
1 2/3 cup (10 oz. pkg.) Nestle Swirled Chocolate & Peanut butter morsels, divided
2 pkgs. (8 oz. each) cream cheese, softened
¼ cup all-purpose flour
1 Tbsp. Vanilla extract
4 large eggs

Preheat oven to 325 degrees.
Combine crumbs, butter and ¼ cup sugar in medium bowl. Remove 1 cup of the mixture and reserve for topping. Press remaining mixture onto bottom of ungreased 13 x 9-inch baking pan. Sprinkle ¾ cup of the Swirled morsels over crust.
Beat cream cheese; remaining sugar (1/2 cup), flour and vanilla in large mixer bowl until smooth. Add eggs, one at a time, beating until smooth.
Pour over crust and morsels in pan. Sprinkle with reserved crumb topping and remaining Swirled morsels.
Bake for 25 to 30 minutes or until set. Cool completely in pan on wire rack.
Refrigerate until firm. Cut into bars.
Makes 24 bars.

I made a batch of Heyjules oatmeal scotchies cookies tonight. They are outstanding!
